I have met some of the goals of that list and so I thought I should update it:)
The ones in RED I have done!

The list:

My motivation/goals for WLS

1. To ride a bike
2. To walk without being breathless
3. To sit in chairs with arms without bruising myself
4. To not have to wonder if I will fit or break a chair
5. To fit in amusement park rides
6. To buy my clothes in a “regular size”
7. To run
8. to swing with my kids
9. To not have to avoid the beach because walking in the sand I sink and become exhausted to fast
10. To feel good about me
11. To be able to go all day without napping
12.To be able to tuck in my shirt
13. So I’m not always self-conscious about my weight, wondering what other people are thinking about how big I am.
14. So I don’t end up with diabetes like my mom, aunt, siblings and both grandmothers.
15. I don’t want to have a heart attack before I’m 40
16. So people don’t perceive me as lazy, because I’m not!
17. Because if a restaurant has booths with a fixed (non-movable)
table, I can’t sit in a booth.
18. So I can buy a bra from the rack in the store and not have to buy them off the Internet or mail order catalogs.
19. So I can know, for once in my life, that I was finally able to take
control of my eating and my weight.
20. I want to feel attractive and sexy !
21.I want to be able to cross my legs!
22. So that when my hubby and kids hug me they can wrap their arms all the way around.
23.Because I can’t walk at the same pace as my husband, otherwise I’d break out in a sweat and being breathless.
24.A lot of what I have in my closet was not purchased because I like
it….I got it simply because it fit and I needed clothes . I want to buy clothes because I like them.
25. Because I cannot get life insurance.
26. I want to teach my children healthy habits by example.
27. Not ever looking looking pregnant just fatter.
28. To wear cute shoes
29.To be able to fly without paying extra or getting a seat belt extender or worst of all- squishing my neighbor!
30. To be able to walk through a tight space like: between cars in a parking space or in a theater or between pews and people at church or in a crowded restaurant,
31. So I don’t see the “look” when people meet me.
32. So people don’t “not Look” at me and avoid “hearing” me.
33. So I don’t struggle getting in and out of cars and buckling my seat belt.
34. So I feel like a lady.
35. So when I am around other people they don’t quickly shift to make room- and then have that embarrassing moment when they overcompensate for the space needed.

Ok- in my quest to save $$$$. I wanted to try couponing. The results:

AMAZING! At Wal-mart I spent $198.82, after coupons: $141.61!

I wish I had a photo!

Today at Rite Aid: $122.78 , after coupons:$$71.52!

I still have to get the rebates checks in the total of: $9.99!

So Total for experiment with only 1.5 hours of work and a $5.78 investment, what is the bottom line?
Here is the breakdown:

198.82+122.78=321.60 (Total of grocery bills before coupons)

Total I PAID AFTER COUPONS: $213.13

The difference: $108.47

Don't forget:

$5.78(for newspapers) and $9.99 in rebates I am waiting for

DRUMMMMMMMROLLLLLLLLL:

I paid: $213.13 - $5.78 + $9.99= Total REALLY PAID= $ 208.92 for 321.60 worth of groceries!!!!!!!

I am so sold!!!!!
I also found 3 new sources for FREE COUPONS , so I don't have to pay more than .80 now!!!

Invasion of the body snatchers!

This was in my in box, I love it!

WARNING FOR WOMEN:

You've heard about people who have been abducted and had their kidneys
removed by black-market organ thieves. Well, this kind of cruel theft is happening with other body parts as well! My thighs were stolen from me during the night a few years ago. I went to sleep and woke up with someone else's thighs. It was just that quick.

The replacements had the texture of cooked oatmeal. Whose thighs were these and what happened to mine? I spent the entire summer looking for my thighs. Finally, hurt and angry, I resigned myself to living out my life in jeans.
Then the thieves struck again. My rear was next. I knew it was the same gang, because they took pains to match my new rear end to the thighs they had stuck me with earlier.
But my new rear was attached at least three inches lower than my original! I realized I'd ha ve to give up my jeans in favor of long skirts.
Two years ago I realized my arms had been switched. One morning I was fixing my hair and was horrified to see the flesh of my upper arms swing to and fro with the motion of the hairbrush. This was really
getting scary - my body was being replaced one section at a time What could they do to me next? When my poor neck suddenly disappeared and was replaced with a turkey neck, I decided to tell my story. Women of the world wake up and smell the coffee! Those "plastic" surgeons are using REAL replacement body parts stolen from you and me! The next time someone you know has something "lifted", look again - was it lifted from you?

P.S. Last year I thought someone had stolen my breasts. I was lying in bed and they were gone! But when I jumped out of bed, I was relieved to see that they had just been hiding in my armpits as I slept. Now I keep them safely hidden in my waistband.

I am so pleased to tell you that after loosing 119 pounds I was able to walk all day for miles and keep up with everyone just fine! We also did a day in Amish country- Lancaster Pennsylvania! I will have to do seperate post to add more- and even then I could never post everything!

The Perfect Gift

Pocket Taser Stun Gun, a great gift for the wife. A guy who purchased his lovely wife a pocket Taser for their anniversary submitted this :

“Last weekend I saw something at Larry’s Pistol & Pawn Shop that sparked my interest. The occasion was our 22nd anniversary and I was looking for a little something extra for my wife. What I came across was a 100,000-volt, pocket/purse-sized taser The effects of the taser were supposed to be short lived, with no long-term adverse affect on your assailant, allowing her adequate time to retreat to safety….

WAY TOO COOL!

Long story short, I bought the device and brought it home. I loaded two triple-a batteries in the darn thing and pushed the button. Nothing! I was disappointed. I learned, however, that if I pushed the button AND pressed it against a metal surface at the same time; I’d get the blue arch of electricity darting back and forth between the prongs.

Awesome!!!

Unfortunately, I have yet to explain to Betty what that burn spot is on the face of her microwave.

Okay, so I was home alone with this new toy, thinking to myself that it couldn’t be all that bad with only two triple-a batteries, right?!! There I sat in my recliner, my cat Gracie looking on intently (trusting little soul) while I was reading the directions and thinking that I really needed to try this thing out on a flesh & blood moving target. I must admit I thought about zapping Gracie (for a fraction of a second) and thought better of it. She is such a sweet cat. But, if I was going to give this thing to my wife to protect herself against a mugger, I did want some assurance that it would work as advertised.

Was I wrong?

So, there I sat in a pair of shorts and a tank top with my reading glasses perched delicately on the bridge of my nose, directions in one hand, and taser in another. The directions said that a one-second burst would shock and disorient your assailant; a two-second burst was supposed to cause muscle spasms and a major loss of bodily control; a three-second burst would purportedly make your assailant flop on the ground like a fish out of water. Any burst longer than three seconds would be wasting the batteries.

All the while I’m looking at this little device measuring about 5″ long, less than 3/4 inch in circumference; pretty cute really and loaded with two itsy, bitsy triple-a batteries) thinking to myself, “no possible way!” What happened next is almost beyond description, but I’ll do my best…

I’m sitting there alone, Gracie looking on with her head cocked to one side as to say, “don’t do it master,” reasoning that a one-second burst from such a tiny little ole thing couldn’t hurt all that bad.. I decided to give myself a one-second burst just for the heck of it. I touched the prongs to my naked thigh, pushed the button, and HOLY MOTHER OF GOD, WEAPONS OF MASS DESTRUCTION!!!

I’m pretty sure Jessie Ventura ran in through the side door, picked me up in the recliner, then body slammed us both on the carpet, over and over and over again. I vaguely recall waking up on my side in the fetal position, with tears in my eyes, body soaking wet, both nipples on fire, testicles nowhere to be found, with my left arm tucked under my body in the oddest position, and tingling in my legs. The cat was standing over me making meowing sounds I had never heard before, licking my face, undoubtedly thinking to herself, “do it again, do it again!”

Note: If you ever feel compelled to “mug” yourself with a taser, one note of caution: there is no such thing as a one-second burst when you zap yourself. You will not let go of that thing until it is dislodged from your hand by a violent thrashing about on the floor. A three second burst would be considered conservative.

SON-OF-A-… that hurt like …..!!! A minute or so later (I can’t be sure, as time was a relative thing at that point), collected my wits (what little I had left), sat up and surveyed the landscape. My bent reading glasses were on the mantel of the fireplace. How did they up get there??? My triceps, right thigh and both nipples were still twitching. My face felt like it had been shot up with Novocain, and my bottom lip weighed 88 lbs.

I’m still looking for my testicles. I’m offering a significant reward for their safe return.”

Today makes 1 year since my precious baby girl was stillborn. It was a terrible day that will never be forgotten. I am so grateful for the family I have and I am jealous of those in Heaven who get to know her now. So Happy Birthday little Princess. While walking down the street one day a US senator is tragically hit by a truck and dies.
His soul arrives in heaven and is met by St. Peter at the entrance.

'Welcome to heaven,' says St. Peter. 'Before you settle in, it seems there is a problem. We seldom see a high official around these parts, you see, so we're not sure what to do with you.'

'No problem, just let me in,' says the man.

'Well, I'd like to, but I have orders from higher up. What we'll do is have you spend one day in hell and one in heaven. Then you can choose where to spend eternity.'

'Really, I've made up my mind. I want to be in heaven,' says the senator.

'I'm sorry, but we have our rules.'

And with that, St. Peter escorts him to the elevator and he goes down, down, down to hell. The doors open and he finds himself in the middle of a green golf course. In the distance is a clubhouse and standing in front of it are all his friends and other politicians who had worked with him. Everyone is very happy and in evening dress. They run to greet him, shake his hand, and reminisce about the good times they had while getting Rich at the expense of the people. They play a friendly game of golf and then dine on lobster, caviar and champagne.
Also present is the devil, who really is a very friendly guy who has a good time dancing and telling jokes. They are having such a good time that before he realizes it, it is time to go.

Everyone gives him a hearty farewell and waves while the elevator rises...
The elevator goes up, up, up and the door reopens on heaven where St. Peter is waiting for him.

'Now it's time to visit heaven.'

So, 24 hours pass with the senator joining a group of contented souls moving from cloud to cloud, playing the harp and singing. They have a good time and, before he realizes it, the 24 hours have gone by and St. Peter returns.

'Well, then, you've spent a day in hell and another in heaven. Now choose your eternity.'

The senator reflects for a minute, then he answers: 'Well, I would never have said it before, I mean heaven has been delightful, but I think I would be better off in hell.'

So St. Peter escorts him to the elevator and he goes down, down, down to hell.

Now the doors of the elevator open and he's in the middle of a barren land covered with waste and garbage.
He sees all his friends, dressed in rags, picking up the trash and putting it in black bags as more trash falls from above.

The devil comes over to him and puts his arm around his shoulder. 'I don't understand,'stammers the senator. 'Yesterday I was here and there was a golf course and clubhouse, and we ate lobster and caviar, drank champagne, and danced and had a great time. Now there's just a wasteland full of garbage and my friends look miserable. What happened?'

Ok , I KNOW this sounds just like a thousand other's New Year's resolutions...

But here goes:

Get back on track the holidays are over- so is my eating sugar, snacking etc..ALL vacations must end.I start tomorrow doing the "5 Day Pouch test", in order to re-set my habits. I did well , but it's back to business now :) I still managed to drop a pound!
WRITE Down and track my exercise. I plan to start jogging when I get to 200 pounds, which will be in '08.
Work hard ad work smart- I have many business goals this year- I want to see 40,000 and 24 homes sold.
Make my family and God a continued priority.
Make some Spiritual and Character changes within myself... Too personal to share, but God is aware :) Hey , I'm a poet and I didn't even know it!
Try to update my blog more often!
Continue to Fulfill my weight loss goals.

Finally a new post! We are off to NC for two days :) My first Thanksgiving since the Weight loss surgery. I have gotten used to NOT eating so hopefully this won't be too hard, I do not want to get sick and be in pain. I am thankful for this new chance in life and no meal s worth the pain of overeating or dumping. I plan to eat by the rules- protein 1st, low fat veggies next and ONLY sugar free stuff- Grazing may be tempting, but I will refrain. For all of you non- digestion altered folks (NDAF) enjoy Thursday and diet Friday!

WFMW: Picture Labels for Pre- Readers

My Children: Princess (4) and Superboy (3) have been keeping their room organized and putting away their own clothes since they were 2 and 3. How? With the aid of Picture labels, I labeled all their dressers with clip art of Panties, Socks a car for "by-bye clothes" and a swing for "play clothes". As far as toys I "right clicked" many things from the Toys R Us Site to make those labels. When laundry needs to be put away I make piles near their dresser and usually point out the "play clothes" pile and the "bye-bye pile" they do the rest!
This works wonders! Picture Labels work for me!

My Children ages 3 and 4 have Chores every day except Sunday. Sunday is their day off and treat day, because they are too young for an allowance on Sunday they get to pick something from the treat box. They alternate daily between this list:
Clean up toys from everywhere but the room, Vac cum,clean bedroom (they share a room), dust, help put away dishes, clean the glass on the front door,help with trash. They also put away their laundry. Some of these are on a as needed basis. They know that they are not doing their job correctly if they complain or whine (I usually have to gently remind that that God says to do everything without whining or complaining. So teaching character and responsibility Works for me!

Be sure to read the first post for more frugal ideas!
This post I would like to share how to make bento lunches frugally. Now before I get started, let me tell you, there are tons of cute little character boxes, shapes etc . that you can find on Ebay. The problem is that the main reason I love bento: is 1. it is cheaper than eating out. 2. it is healthier . Hence, Buying all that stuff makes it so Non- frugal :). Although cuteness is a reason for some, it is not my main focus. I do admit to wanting some egg molds really bad. You can get them on Ebay. I have done my homework and have learned a few tricks along the way.

You can use cookie cutters to cute cute sandwiches, or to mold rice into really cute shapes, using plastic wrap or just plain balls !:

You can make Jello in cute shapes buy using silicone Ice cube molds or candy molds.

Here is a photo of my free or cheap Bento items:

From left to right :

The : Test Tube used to contain liquid protein. I have used it to freeze water - making a long ice pack. I have also used it to hold sauces for picnics.
The small glad ware dishes are used inside the larger container.
The Muffin cups are paper dividers.
Across the front from L to R is empty Crystal Light containers- Great to pack empty - for picnics I use these as disposable sauce dipping containers- no need to keep them, I have an abundance of them . The small bottle with a red lid is a empty spice bottle that I use for salt/pepper , A medicine cup form cough syrup also used for dipping, Food color bottles for soy sauce. ( Just pour sauce into a small cup and draw up like a dropper. next is a vanilla extract bottle and the pink silverware case was a pencil case from a Burger King happy meal! I also have found flat tooth brush travel holders that would work!
Now for Ice and drinks:

Of Course you would want a thermos for hot drinks and soups.
Keep those water bottles to refill,
Use Plastic jars like Mayo or Peanut Butter, Buy a small rubbermaid bottle .

They Crystal light tube I use for food like chips, crackers etc and should be in the other picture (oops) I also use these for damp towels to wipe my hands! Or just carry sanitizer wipes or a small sanitizer bottle.

Now pack it all inside your bento bag: In My case I have used old gift bags, Wal-mart sacks,insulated bags and a freebie canvas bag. Traditional bento ether use a bandanna type cloth or a drawstring bento bag :

Letter to My Body

Dear Body,

Soon, very soon, you will be meeting someone who is going to change us for the better. He is a skilled and accomplished surgeon who's job it is to help people like us to have the right tools and the right start to lose pounds. Now, before you get upset, I want you to listen. We've been through this before, I try on jeans, you want to eat ice cream, so I appease you and get yoga pants. I want to wear high heels, you are happy in flip flops because our feet hurt, so I appease you. But the other day, when you wouldn't let me bend over to tie my shoes, well that was just too far. You have taken this completely out of control.

I tried to be nice. I tried to look the other way. I have let you lead me with every whim, every fancy. You want cookies at 4am, you have cookies. You want a milkshake, you get a milkshake. You would rather sit, we sit. You want a hamburger, a hamburger it is. You want to nap instead of going out, we nap. But now, it's time for me.

I want to wear pretty clothes. I want to wear high heels. I want to look at us in the mirror and think WOW we can totally do this-- I want to feel gorgeous. I want to run and have our heart beat as fast as it can. Those muscles that have been hidden for so long-- well, we are dusting them off and bringing them out for show. I promise, this is going to feel so good-- we are cleaning house.

Yeah, that's it, we are cleaning house, getting rid of all that stuff we don't need anymore. We don't need the layer of protection, because we've outgrown it. We don't need the layer of sorrow because we have completed and grieved and moved past it. We don't need the layer of safety because we can handle any kind of attention that comes our way. We could use a strong back and core to build a new foundation. We will build powerful legs to keep us grounded when we need to be, and keep us moving to new adventures as they call to us. We can develop strong arms for new loves to hold onto, for friends and family to be enveloped by. We can allow our body to be hard, and our heart to be soft, so that every soft hug comes from inside, not from outside.

So body, here's what has to happen. We are going on a plan for two weeks to loose some fat around our liver. This is going to be tough for both you and me and I am going to need your help. When we are on the road, I want you to pay extra special attention to all the things that bug you about travelling-- out of breath, sweating, going through security, taking off shoes, putting them back on, getting an extender, not being able to put the tray table down-- etc. I mean everything. Look at all the little things that are annoying. And then on the way back, we'll see if any of them have changed. While we are away, I will need you to tell me when you are hungry. Not bored. Not deprived. Not interested in eating because you can... but actual no joke hungry. And when that happens, I'll give you some nourishment. It won't be much, but it will be something. Because I have to start using nourishment as fuel, not a reward, not as a pastime, but as fuel. This will be difficult at first, but then, you'll see that we will run better in sync. You will be hungry, and I will feed you. Thirsty, you'll drink. We will together work out-- first walking and stretching, then running. Body, it is going to be a whole new life.

Soon, very soon, we are going to play again. We will jump and feel freedom-- and every step won't feel like the earth is trying to pull us down. We will be light-- our breathing will be light, and wait until we get Mind involved with us-- omigosh-- it will be like we are 5 years old again.

So body-- you get whims until the end of next week. Then after that, we will work together to do what's best for this house cleaning of sorts. Because I love you body-- you have been very very good to me-- indulgent, but good. And I want you around for a long while. So let's work on this together, okay?

Now, it's time we put ourselves to bed. I know, you want to check out myspace, but it's late and we need our beauty sleep.

WFMW: Bento Lunches- quick and easy prep!

Bento is the Japanese tradition of packing lunches to go into small portions in a Reusable container- This can be any small plastic container with or without dividers. The Japanese have made this into a art form by using egg molds, hot dog cutters,rice molds , decorative dividers and creativity. Now I have not gotten too fancy but I have always packed lunches, yes it is easier to eat on the run at McDonalds drive through but I have found that if I keep a few basics on hand it is not a problem it takes little time and effort, we save money and make better choices. So if I am going out I always pack food and drinks. If we don't need it then I just bring it home for later!

My staples:
cheese sticks, baby carrots, pre-cooked grilled chicken strips, small pretzels, animal crackers, grapes,dried fruits, small refillable "sauce cups" or condiment packs from the occasional drive through trip, already cut celery and other fresh veggies (fill a small container at the grocery store salad bar). Refillable water bootles, ice packs, juice pouches or boxes and a small lunch box cooler. Be sure to look at the "ethnic food aisle for cool candies and cookies!

Be creative- use leftovers that are not messy.

Now if you want to be traditional or just plain cute then by all means buy a bento and the tools. However if you are like me and have a hubby who would rather chew off an arm than to eat out of a Hello Kitty box then pick up one of the Rubbermaid divided plates.

If you are inclined to be cute- you do not have to spend much! You can use cookie cutters as "stamps" or to cut foods, paper muffin liners as dividers, Reuse small containers for sauces. I have even seen where people reused the mini bubble bottles from weddings for sauces 9by cutting off the wand)! Me I just use small tupperware containers, I reuse medicine cups from liquid meds. and yard sale tupperware!

WFMW: Homemade Yogurt without a yogurt maker!

My Family LOVES yogurt but there are four issues here:
1. We are ALL Lactose intolerant
2. The amount we consume is tough on the budget
3. I like to control ingredients and eat as healthy as possible.
4. I did not need or want another appliance (yogurt maker)that I would have to store in my tiny kitchen.

My Solution- Homemade yogurt- so easy- and fits the above criteria!

And Now the recipe:

Yogurts

Materials:
1/2 gallon milk (can be any kind)
3/4 C. instant dry milk
2-3 tblsp. yogurt with ACTIVE CULTURES Please read the label and make sure this is active yogurt
several sterilized jars (can be glass, ceramic, metal or plastic)
You will need a candy or meat thermometer
Sweetener( see the notes below)

Sterile mixing spoon and jars by immersing them in boiling water.

Bring milk to 180 degrees F, remove from heat and cool to 110- 115 degrees F and add the cup of yogurt WITH ACTIVE CULTURES, remove a bowl full and mix in dry milk . Add back to pan and stir. Please read the label and make sure this is active yogurt. It will say on the label. Mix well with sterilized stirring spoon. Pour into sterilized jars and cap loosely. Hold at 100-110 degrees over night. ( at least 8hrs. how o below) But remember 100-110 Degrees are the magic numbers. Over 110 and the yogurt culture dies. Under this and it "sleeps." By morning you should have nice yogurt for breakfast!

Suggestions below:

I always use prepared yogurt as my culture. I buy a large container of plain store brand yogurt from the store. I bring it home and scoop it into a couple of ice cube trays. Then I freeze it. When it is completely frozen, I take the frozen yogurt cubes and pack them in a plastic freezer bag. Each time I make yogurt, I use one cube as the starter. You can use your own fresh yogurt as a starter too, but eventually it loses it's power due to the introduction of foreign bacteria, usually after using it about 3 or 4 times. I like to use a new frozen yogurt cube each time I prepare yogurt. I've had my best results this way.
Sweeteners and flavors: If you plan to use this as a substitute for sour cream then leave plain, Or add flavors and sweeteners as you serve. Flavors: Use any extract or Davinci syrup flavor or use jams and preserves. jams and preserves would be added as you serve, the syrups and extracts can be added while heating or when served. I prefer vanilla. Sweeteners: can be added while heating or as you serve add to taste: Sugar, Splenda, honey, Maple syrup, molasses.

There are lots of ways to incubate your yogurt:
I prefer to do it in my electric oven. I set the stove dial half way between OFF and 200°, or at approximately 100°. The light which signifies the oven is on, pops on for a moment, and then pops off when the temperature is reached. I set my jar of yogurt in the oven and leave it for between 6 and 8 hours, usually overnight, or while I'm out for the day. I take out the yogurt when it is thick. This method works for me*. My yogurt has a very mild flavor.
Some people pour the warm milk combined with the starter, into a large thermos and let it sit overnight.
Another friend uses a medium sized picnic cooler to incubate her yogurt. She places the jars inside the cooler and then add two jars filled with hot tap water, to keep the temperature warm enough. After 4 hours, check the yogurt to see if it is thick enough. If it isn't then refill the water jars with more hot water, return them to the cooler, and let the yogurt sit another 4 hours. When I tried this method, it worked very well. It took a full 8 hours, but the yogurt was perfect, and I liked not having my oven tied up during the day.
Other folks set the yogurt on top of a warm radiator, or close to a wood stove.
In a gas stove with the pilot operating.
On a heating pad set on low. You set it on low and then cover the heating pad with a towel, place the yogurt on top of it, and put a large bowl or stew pot upside down over the yogurt. This makes a little tent which keeps the heat in. I don't have a heating pad, and have never actually used this method myself, but a good friend swears by it.
Sometimes I have placed the jar in a pan filled with warm water, to keep the temperature even. This worked pretty well when I incubated the yogurt next to the wood stove. It kept the yogurt at a uniform temperature, even with occasional drafts from the front door opening and closing.

*Now in the event that it does not turn out as thick as you like, DO NOT THROW AWAY!
I have had only 2 batches turn out a little thinner than I like (in 8 years) I just used these for smooothies and as "drinkable yogurt!

I received this in a e-mail, I don't know who originally Wrote this but it is too funny not to post!

The Art of Waxing...

My night began as any other normal weeknight. Come home, fix dinner, play with the kids. I then had the thought that would ring painfully in my mind for the next few hours: "Maybe I should pull the waxing kit out of the medicine cabinet." So I headed to the site of my demise: the bathroom. It was one of those "cold wax" kits. No melting a clump of hot wax, you just rub the strips together in your hand, they get warm and you peel them apart and press them to your leg (or wherever else) and you pull the hair right off. No muss, no fuss. How hard can it be? I mean, I'm not a genius, but I am mechanically inclined enough to figure this out. (YA THINK!?!) So I pull one of the thin strips out. Its two strips facing each other stuck
together. Instead of rubbing them together, my genius kicks in so I get out
the hair dryer and heat it to 1000 degrees. ("Cold wax," yeah...right!) I lay the strip across my thigh. Hold the skin around it tight and pull. It works! OK, so it wasn't the best feeling, but it wasn't too bad. I can do this! Hair removal no longer eludes me! I am She-rah, fighter of all wayward body hair and maker of smooth skin extraordinaire. With my next wax strip I
move north. After checking on the kids, I sneak back into the bathroom, for the ultimate hair fighting championship. I drop my panties and place one foot on the toilet. Using the same procedure, I apply the wax strip across the right side of my bikini line, covering the right half of my hoo-ha and stretching down to the inside of my butt cheek (it was a long strip)
I inhale deeply and brace myself....RRRRIIIPPP!!!! I'm blind!!! Blinded from pain!!!!.... OH MY GAWD!!!!!!!!! Vision returning, I notice that I've only managed to pull off half the strip. CRAP! Another deep breath and RIPP! Everything is spinning and spotted. I think I may pass out...must stay conscious...must stay conscious. Do I hear crashing drums??? Breathe, breathe...OK, back to normal. I want to see my trophy - a wax covered strip, the one that has caused me so much pain, with my hairy pelt sticking to it. I want to revel in the glory that is my triumph over body hair. I hold up the strip! There's no hair on it. Where is the hair??? WHERE IS THE WAX??? Slowly I ease my head down, foot still perched on the toilet. I see the
hair. The hair that should be on the strip...it's not! I touch. I am touching wax. I run my fingers over the most sensitive part of my body, which is now covered in cold wax and matted hair. Then I make the next BIG mistake...remember my foot is still propped upon the toilet? I know I need to do something. So I put my foot down. Sealed shut! My butt is sealed shut. Sealed shut! I penguin walk around the bathroom trying to figure out what to do and think to myself "Please don't let me get the urge to poop. My head may pop off!" What can I do to melt the wax? Hot water!! Hot water melts wax!! I'll run the hottest water I can stand into the bathtub, get in, immerse the wax-covered bits and the wax should melt and I can gently wipe it off, right??? *WRONG!!!!!!!* I get in the tub - the water is slightly hotter than that used to torture prisoners of war or sterilize surgical equipment - I sit. Now, the only thing worse than having your nether regions glued together, is having them glued together and then glued to the bottom of the tub...in scalding hot water. Which, by the way, doesn't melt cold wax.
So, now I'm stuck to the bottom of the tub as though I had cemented myself to the porcelain!! God bless the man who had convinced me a few months ago to have a phone put in the bathroom!!!!! I call my friend, thinking surely she has waxed before and has some secret
of how to get me undone. It's a very good conversation starter "So, my butt and hoo-ha are glued together to the bottom of the tub!" There is a slight pause. She doesn't know any secret tricks for removal but she does try to hide her laughter from me. She wants to know
exactly where the wax is located, "Are we talking cheeks or hole or hoo-ha?" She's laughing out loud by now...I can hear her. I give her the rundown and she suggests I call the number on the side of the box. YEAH!!!!! Right!! I should be the joke of someone else's night. While we go through various solutions. I resort to trying to scrape the wax off with a razor . Nothing feels better than to have your girlie goodies covered in hot wax, glued shut, stuck to the tub in super hot water and then dry-shaving the sticky wax off!! By now the brain is not working, dignity has taken a major hike and I'm pretty sure I'm going to need Post-Traumatic Stress counseling for this event. My friend is still talking with me when I finally see my saving grace....the lotion they give you to remove the excess wax. What do I really have to lose at this point? I rub some on and .... OH MY GOD!!!!!!! The scream probably woke the kids and scared the dickens out
of my friend. It's sooo painful, but I really don't care. "IT WORKS!! It works !!" I get a hearty congratulation from my friend and she hangs up. I successfully remove the remainder of the wax and then notice to my grief and despair....THE HAIR IS STILL THERE.......ALL OF IT!
So I recklessly shave it off. Heck, I'm numb by now. Nothing hurts. I could have amputated my own leg at this point. Next week I'm going to try hair color......

Full Of Hot Air

That would be me, good Lord the one thing NO one warned me about was the gas pain from the surgery! I was so full of air it was painful! Other than that all has been well. I have been home since yesterday. I will be updating yall soon and getting back on the blog wagon- but for now- I need to rest. Thanks for all of the well wishes and support.

Kitchen Tip Tues.: Flax and Menus

Did you know you can use flax as a substitute for fat or eggs in recipe? Three tablespoons of flax equals one tablespoon of fat or oil, and one tablespoon of flax plus three tablespoons of water equals one egg. Not only is this healthy it makes it safe for those with egg allergies, Vegans and it is frugal! If you count the cost of flax vs. eggs the savings usually are wonderful! It is sold in a box , near the flour. I also include a small spoon full in my kid's yogurt/cereal/ smoothies/ granola.

Bear with me this is a long Intro!
This Is the Parenting Edition of WFMW, Believe me- Mommy's Power Naps make me more patient and sweet as a mommy :)
I have been burning the candle at both ends for some time now. I have worked at least PT (up until this year) every since my babies were little. My hubby and I have always worked this out so that we work opposite schedules so there would be no need for child care. The hardest was the Mid night shifts! This year I have been in Real estate school and plan to start working again in Jan. I am taking classes on line so that my hubby could pick up a PT job (along with the FT job ) to supplement my loss of income. How did we work it out? In order that the schedule would not interfere with my home, I get up before everyone else ( at 5am and do 2 hrs. of classes daily.) I do not have the luxury of getting to bed before 10pm , so usually right after lunch I am worn down. I take a 30 min. POWER nap even though my 3 and 4 year old do not nap. How? I put in a 30 min. kid tape, turn down the volume and curl up on the couch. My oldest is in charge of waking Mommy after the movie! Mother Of The Year? Probably not, but it works for me! Frugal Friday: New uses for Free containers!

I love to re-use free containers in fact I did a whole post about peanut butter jars! Here are a few of my reusable container ideas:

Deli lunch meat in "zip lock" containers- self explanatory
Crystal light (generic of course) - used for small craft items, Coffee pods, filled with water and make large ice blocks for drinks, paint cups for kids
Frosting tubs, GV Marshmallow cream, yogurt, Sour cream- same as above and also- cut small cross slits in the lid for a lidded cup the kids can take anywhere without your fearing they are lost just add a straw! Also wonderful for homemade yogurt
Large Pickle jars and the large animal cracker jars sold at Wal-mart become storage for rice, flour etc.
Large Butter tubs- to fill with soup to freeze. I can label the top with a sharpie and just throw it out or give it away to a sick friend. Sometimes I even mark through and rewrite again! I also keep two or three around to send leftovers home with people so they don't have to be worried about returning the container.
I use glass jars for 1 thing only- grease disposal! I usually keep one in the fridge. with bad -trash grease from chicken, meat or burgers. I store it in the fridge until it is full then seal and throw away. I use glass because you can add warm grease and I keep it refrigerated because I don't want to grow anything in it.
I use cereal, wax bags as freezer wrappers when I make and freeze hamburger patties.
I also used (when I had babies) baby food jars to organize small screws and nails in the garage. nail or screw the lid to the bottom of a shelf and then fill jar and screw to the lids. You can modify this by using any jar you want to.

When My children (they are 3 and 4) started to out grow the sippy cups, I decided, instead of buying brand new "big kid cups", I would order the lids with straws and change the lids

from the regular sippy lids. I plan this month ( my new budget always starts on the 1st) to order the Coolster tumbler spill proof lids - they look like grown up coffee cups! What savings! I am still using the original 9oz insulated cups they started with! When I do decide to pass these along, the next person will have lids to take them from beginning to end! My favorite is the Playtex brand because the lids are always interchangeable! Buy the way, these cups were from a yard sale and I only paid 50¢ each because they did not have lids! So when my babies were ready to start using a cup, I called the Playtex company and asked could I order some lids. Customer Service sent 3 free Baby sipster lids. These are the the ones with a soft spout and handles. I ordered the lids I needed from then on. I also have done this with used baby bottles, parts for a toddler bed, a bottle warmer and other items. You can find replacement parts and even manuals for almost most anything for babies and some household items. I suggest that you always contact customer service even it is available on the web site sometimes they will send the parts or manuals for free.

Sandwich Station

My kids love Peanut Butter- they eat some kind of PB sandwich most days. I found the easiest thing to do was keep my bread, Peanut butter, Nutella and Marshmallow cream inside a plastic box with lid on top of my refrigerator. Jelly is in 'fridge of course! This way when I need to make a quick sandwich it is all together!

Frugal Friday: Frugal vacation

My favorite "frugal vacation" tips are probably not new to anyone, but it only occurred to me and my family a couple of years ago.
Here are my favorites:
1. Take a weekend not a week long trip
2. If you have a whole week or more, and need to fly,travel during the week - the rates are cheaper.
3. Vacation in your home town- if you have the money get a hotel close to home- this seems silly, but as women we feel the need to cook and clean if we are in our home. If a hotel is out of the budget, then have a talk with your family and agree to share the chores if you stay home. Explain to your DH that if you have to cook and clean, then you will not be on a true vacation. Cook as little as possible and use paper plates so clean up is minimal. Let the laundry wait and enjoy the local sites. If you stay at a hotel, be sure to get a room with a refrigerator and microwave. Have the free hotel breakfast, for lunch and snacks have sandwiches, instant meals like Ramen or oatmeal , cookies and fruit cups (that you pack supplies for )and for dinner- eat out. In a pinch you can usually get a few disposable bowls, cups and cutlery from the hotel breakfast bar. Save dinner leftovers to have for lunch the next day. If you have dog or cat you can leave them home and just check in with them.
4. If you own one or can borrow one use a RV! Try camping locally either in an RV, tent or campground. Check out KOA .
5. Stay with family if you can. If you do, be sure to plan at least one day to be at their disposal. Don't expect them to cook and clean for you. make sure to respect their schedules- they may have to work while you are there, so don't rely on them to entertain you. Discuss your plans with them so they know ahead that they are "off the hook."
6. If you are brave enough then try a home exchange.
7. Use time share programs- Google "time shares" for more info .

Enjoy your vacation- I am off to a hotel this weekend, Only about 3 miles from my home. Our family has planned a weekend of Library time, A free kid's class at Home Depot, A trip to the beach, a shopping spree at the Dollar Store ($5 per kid :) , a ferry ride across the river($1 each) to get ice cream and play at the park. I don't have to cook or clean and the weather is lovely so we will leave our dog outside all weekend and just check in once a day for food refills (we have a self watering dish).

My kids (princess 4 and Super boy 3 ) can be picky eaters, so once in a while I will change the color of their food and let them choose the color . Surprisingly they don't like regular eggs but they love red or green ones! Oatmeal and Cream of Wheat always taste best in shades of pink and blue, even spaghetti is better if it is purple!

Recipes:
Meatball Hash Brown Bake

2 eggs
3/4 cup crushed saltines (about 20 crackers)
6 to 8 garlic cloves, minced
2 tsp salt, divided
1 1/2 tsp pepper, divided
1 pound ground beef
1 can (10 3/4 oz) condensed cream of chicken soup, undiluted
1 cup sour cream
1 cup shredded cheddar cheese
1 large onion, chopped
1 package (30 oz) frozen shredded hash brown potatoes, thawed

In a bowl, lightly beat eggs. Stir in cracker crumbs, garlic, 1 tsp salt and 1/2 tsp pepper. Crumble beef over mixture; mix well. Shape into 1-in balls. In a covered skillet over low heat, cook the meatballs in a small amount of water until browned; drain.

In a bowl, combine the soup, sour cream, cheese, onion and remaining salt and pepper. With paper towels, pat hash browns dry. Stir into the soup mixture. Transfer to a greased 13"x9"x2" baking dish. Arrange meatballs over top pressing into mixture. Cover and bake at 350 degrees for 45 minutes. Uncover; bake 15 minutes longer or until meat is no longer pink and potatoes are tender.
Apple Stuffing Pork Chops

1 box stove topped stuffing
1 can apple pie filling
pork chops
Layer in dish Stuffing mix and the amount of butter add water that the Package calls for.
pie filling and Pork chops. Cover with foil and bake until meat is cooked 350 30-45 min.

Pumpkin Snack

1/2 cup canned pumpkin
1/3 cup marshmallow cream
cinnamon
nutmeg
1 sheet graham crackers, divided

1. Heat pumpkin and fluff over medium heat, and stir in spices. When warm, spoon into serving dish, stick in crackers, and enjoy!
Quick & Cheesy Sausage Rotini

3 cups rotini pasta, uncooked
1 lb. Italian sausage links, cut into bite-size pieces
1 can (15 oz.) diced tomatoes, undrained
1 cup chopped onions (about 1 medium)
1/4 cup KRAFT Balsamic Vinaigrette Dressing
3/4 cup KRAFT Shredded Mozzarella Cheese, divided

COOK pasta as directed on package.
MEANWHILE, cook sausage in large nonstick skillet on medium-high heat 10 min. or until sausage is cooked through, stirring occasionally. Drain sausage; return to skillet. Add tomatoes with their liquid, the onions and dressing. Cook 5 min. or until onions are crisp-tender, stirring occasionally.
DRAIN pasta. Toss with the sausage mixture and 1/2 cup of the cheese. Sprinkle with the remaining 1/4 cup cheese.

You can get an air tight seal on your zip lock bags! Fill a large bowl or the kitchen sink with water. Seal the zipper bag all the way except for about 1/2 inch . Submerge all except the very top of the unsealed section and seal it while under the water. The water pressure takes all the air out! Just wipe the bag dry and freeze! This works for anything!

Kitchen Tip: Keep your stove clean, without elbow grease!

By lining the bottom of the oven (under the element) with foil. Then just change when it gets to many spills :) Wipe the rest and you are done! I also line drip pans with foil so all I have to do is change the foil and wipe them out.

Peanut, Peanut Butter... peanutty

I love the plastic Peanut butter jars-They have a wide mouth, they come in custom sizes (I buy the sizes I need) and they can be frozen! I use these to store and mix salad dressing, to store and mix just a cup or two of powdered milk, as freezable storage for Stock (pre-measured) , to hold small home school items, craft supplies, and more. They fit just right inside of DH's lunch box I add a microwavable bowl and spoon and send his soup in a jar. They are great for road trips and picnics. Store water and freeze overnight to have a sealable glass of drinking water. I have stored leftover tea and coffee for cold coffee drinks. Leftover pancake and waffle mix and can be pored strait from the jar. I usually have 6-8 jars at hand all the time and can easily replace as needed! I could go on but you get the idea.

I love the Jiffy brand muffin mixes! They cost between 33¢-50¢ a box . They come in 6 flavors: apple cinnamon, Corn, blueberry, raspberry, oatmeal, bran with dates,and banana nut. Usually they call for 1/3 c. milk (I use reconstituted powdered milk) and 1 egg- you stir and bake. One box make 6 good sized muffins! Jiffy also make other products like cake mixes, frosting mixes and other stuff! Take a look at their web page for recipes, and to see the complete line of products!

Easy. cheap and lowfat ground meat

When I get home from grocery days I usually set aside some prep work time see this post . Part of my prep work also include pre-cooking ground meat . For any recipe that call for hamburger I use a 50/50 mix of ground beef and ground turkey. To cook it quickly, in large quantities and to climate even more fat, I boil it! You just put the whole thing in a large pot, coo and drain. Then package into zipper bags and freeze for later use- this saves, fat, time, money (turkey is cheaper) and freezer space!

Blueberry Muffins

1-1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg 1/3 cup milk
1 cup fresh blueberries
1/2 cup white sugar
1/3 cup all-purpose flour
1/4 cup butter, cubed
1-1/2 teaspoons ground cinnamon
Directions
1 Preheat oven to 400 degrees F (200 degrees C). Grease
muffin cups or line with muffin liners.
2 Combine 1 1/2 cups flour, 3/4 cup sugar, salt and
baking powder. Place vegetable oil into a 1 cup measuring
cup; add the egg and enough milk to fill the cup. Mix this
with flour mixture. Fold in blueberries. Fill muffin cups
right to the top, and sprinkle with crumb topping mixture.
3 To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3
cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon.
Mix with fork, and sprinkle over muffins before baking.
4 Bake for 20 to 25 minutes in the preheated oven, or
until done.
Chicken Enchiladas

1 (10.75 ounce) can condensed cream of chicken soup
1/2 cup sour cream
1 tablespoon margarine
1 onion, chopped
1 teaspoon chili powder
2 cups chopped cooked chicken
1 (4 ounce) can chopped green chile peppers, drained
8 (8 inch) flour tortillas
1 cup shredded Cheddar cheese
DIRECTIONS:
1.Preheat oven to 350 degrees F (175 degrees C).

2.In a small bowl mix the soup and sour cream; set aside.

3.Melt margarine in a medium saucepan over medium high heat. Add onion and chili powder, and saute until tender. Stir in the chicken, chile peppers, and 2 tablespoons of the soup mixture. Cook and stir until heated through.

4.Spread 1/2 cup of the soup mixture in a 9x13 inch baking dish. Spoon about 1/4 cup of the chicken mixture down the center of each tortilla. Roll up tortillas, and place, seam-side-down, in the baking dish. Spoon remaining soup mixture on top, and sprinkle with cheese.

5.Bake 25 minutes in the preheated oven, or until bubbly and lightly browned.

Beans and Rice or Chicken and Rice (Puerto Rican)*

* To make it a meal add Chicken wings and potatoes
For a side dish- leave out the chicken and potatoes

In a saucepan heat:
1 packet of Sazon
1 can red beans or kidney beans
1 can tomato sauce
2 cubes of Suffrito (see below)
1 cup green spanish olives
1 tbsp. olive oil
Skinned Chicken wings
2 or 3 cubed potatoes- with or without skin as you prefer

Bring to a boil and cook on med. heat until the chicken is cooked.
Pour over white rice and serve. Mix any leftovers with rice and refrigerate. Taste best the next day.

Suffrito-
A spanish blend that taste great in soups and many other dishes.

To make: blend the following ion a blender until it is a liquid form similar to baby food.
1 onion
1 bunch of cilantro (stems and all)
1 green bell pepper
1 whole head of garlic
freeze this in ice cube trays - be sure to cover it with plastic wrap or foil!- When it is frozen it can be popped out of the tray and stored in the freezer inside of zip locks for months!
Chicken Lasagna (From : Tammy’s Recipes)

Ingredients:

9 lasagna noodles, cooked according to package instructions
2 Tablespoons butter
1 clove garlic, minced
1/2 medium onion, chopped
2 Tablespoons flour
1 Tablespoon cornstarch
1 1/2 cups milk
1/8 teaspoon black pepper
1/2 teaspoon salt
1/4 teaspoon basil
4 ounces cream cheese
1/3 cup grated Parmesan cheese
8 ounces (2 cups) mozzarella cheese, shredded
1 cup cottage cheese
2 cups cooked cubed chicken
1/8 teaspoon oregano
Instructions:

1. In a large skillet over medium heat, melt butter. Saute onions and garlic until translucent. Add flour and cornstarch, stirring to mix. Add milk, pepper, salt, and basil, whisking until well mixed. Cook and stir until thick and bubbly.

2. Add cream cheese and reduce heat to medium-low. Cook and stir until cream cheese is melted. Add Parmesan cheese, stirring to mix. Remove from heat.

3. In a bowl, combine 1 cup of the mozzarella cheese, the cottage cheese, and the chicken.

4. Grease an 8x8 inch baking dish. Put a layer of lasagna noodles in the bottom of the dish. Top with half of the chicken mixture. Put a layer of lasagna noodles on top of mixture. Top with half of the white sauce. Continue layering noodles, chicken, noodles, and sauce.

5. Top with remaining 1 cup of mozzarella cheese. Sprinkle with oregano.

6. Bake uncovered at 350 degrees for 30-40 minutes, until lightly browned.

Crispy Fish Bake

2 cups instant white rice, uncooked
2 cups boiling water
3 cups frozen broccoli florets
1 can (10-3/4 oz.) condensed cream of mushroom soup
1/2 cup water
1 cup KRAFT Shredded Cheddar Cheese
4 frozen breaded fish fillets, such as sole, haddock or cod (about 12 oz.)

PREHEAT oven to 400°F. Spread rice in 8-inch square baking dish. Pour boiling water over rice. Cover with plastic wrap. Let stand 5 min. Uncover.
ARRANGE broccoli over rice. Mix soup and water; pour over broccoli. Sprinkle with half of the cheese. Top with fish; sprinkle with remaining cheese.
BAKE 30 min. or until fish flakes easily with fork.

Nutty Pear Toast

1 slice multi-grain bread, toasted
1 Tbsp. PHILADELPHIA Light Cream Cheese Spread
1/4 of a medium fresh pear, cut into thin slices
1 tsp. maple-flavored or pancake syrup
1 Tbsp. PLANTERS Walnut Pieces

SPREAD toast with cream cheese spread.
ARRANGE pear slices over cream cheese spread. Drizzle with syrup; sprinkle with walnuts.
SERVE immediately.

Hummus Dip

1 can (15-1/2 oz.) chickpeas (garbanzo beans), undrained
1/4 cup chopped onion
2 Tbsp. lemon juice
1/2 tsp. minced garlic
1/2 tsp. dried basil leaves
1/2 tsp. hot pepper sauce
WHEAT THINS Snack Crackers

DRAIN beans, reserving 1/4 cup of the liquid.

Waffles

2 cups Original Bisquick® mix
1 1/3 cups milk
1 egg
2 tablespoons vegetable oil
1 tsp. Cinnamon
1 tbsp. Sugar/ splenda
1 tsp. vanilla

1.Heat waffle iron; grease with vegetable oil or shortening.
2.Stir ingredients until blended. Pour onto center of hot waffle iron. Close lid of waffle iron.
3.Bake about 5 minutes or until steaming stops. Carefully remove waffle.
(Total time will vary; cook or bake time is per batch.)

"Beary-Berry" Banana Split

1 small banana, split lengthwise
1 container (6 oz.) strawberry low-fat yogurt
1/4 cup TEDDY GRAHAMS Cinnamon Graham Snacks

PLACE bananas in sundae dish or cereal bowl.
TOP evenly with yogurt and graham snacks.
SERVE immediately.

Several times I have either purchased items at a garage sale or been given something from Freecycle. Without instructions I would not be able to get the full use of the item . SO here is what I do:
You usually can get a free copy of the manual on the manufacture’s web site, sometimes they have a downloadable PDF , if not call customer service, they can send you one. I have done this with several used items that I wanted a manual for and never had to buy a Manuel or pay for postage! I have done this with everything from Baby strollers to TV's . Usally you can even get replacement parts for a few dollars instead of buying a brand new item replace a small part.

My Kitchen tip for this week: When I bring home my groceries I plan a "prep day" this is the day that I cut / chop/wash or peel all my produce for my recipes for the week. Sometime if time allows I will also brown meat and cook and chop chicken for the week. This saves so much time during a busy week! To make lettuce and celery last for about a month- wash. spin dry, and wrap in either a kitchen towel or paper towel. then wrap in foil and put inside a zipper bag.

Italian Sausage Bake

1-1/2 cups small penne pasta, uncooked
1 lb. Italian sausage, casings removed
4 small zucchini, halved lengthwise, sliced (about 3 cups)
1 medium red or green pepper, chopped (about 1 cup)
1 can (8 oz.) pizza sauce
1/2 lb. (8 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut into 1/2-inch cubes
1/2 cup KRAFT 100% Grated Parmesan Cheese

PREHEAT oven to 350°F. Cook pasta as directed on package. Meanwhile, brown sausage in large deep skillet on medium-high heat, stirring occasionally to break up the sausage. Drain; return sausage to skillet. Add zucchini, peppers and pizza sauce; stir until well blended. Cook 5 to 6 min. or until vegetables are tender. Drain pasta. Add to sausage mixture along with the VELVEETA; stir until well blended.
SPOON into 13x9-inch baking dish sprayed with cooking spray; sprinkle with Parmesan cheese.
BAKE 15 to 20 min. or until heated through.
Kid Friendly
Prepare as directed, substituting 1 lb. lean ground beef for the sausage and 1 cup each shredded carrots and zucchini for the 3 cups sliced zucchini. Also, try using a fun pasta shape, such as wagon wheels.

Hummus Dip

1 can (15-1/2 oz.) chickpeas (garbanzo beans), undrained
1/4 cup chopped onion
2 Tbsp. lemon juice
1/2 tsp. minced garlic
1/2 tsp. dried basil leaves
1/2 tsp. hot pepper sauce
WHEAT THINS Snack Crackers

DRAIN beans, reserving 1/4 cup of the liquid.

6 tbl. Butter/ margarine
Opt: 1 Tbl. Poppy seed

Make rice according to package directions. Melt butter and crush crackers, coat the crackers in the butter and set aside.Mix all the rest together in a bowl.In a greased 9x13 casserole pan, layer the rice, and chicken mixture and top with crushed crackers. Bake 25-30 min.

To Die For Blueberry Muffins

1-1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg 1/3 cup milk
1 cup fresh blueberries
1/2 cup white sugar
1/3 cup all-purpose flour
1/4 cup butter, cubed
1-1/2 teaspoons ground cinnamon
Directions
1 Preheat oven to 400 degrees F (200 degrees C). Grease
muffin cups or line with muffin liners.
2 Combine 1 1/2 cups flour, 3/4 cup sugar, salt and
baking powder. Place vegetable oil into a 1 cup measuring
cup; add the egg and enough milk to fill the cup. Mix this
with flour mixture. Fold in blueberries. Fill muffin cups
right to the top, and sprinkle with crumb topping mixture.
3 To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3
cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon.
Mix with fork, and sprinkle over muffins before baking.
4 Bake for 20 to 25 minutes in the preheated oven, or
until done.

Crispy Fish Bake

2 cups instant white rice, uncooked
2 cups boiling water
3 cups frozen broccoli florets
1 can (10-3/4 oz.) condensed cream of mushroom soup
1/2 cup water
1 cup KRAFT Shredded Cheddar Cheese
4 frozen breaded fish fillets, such as sole, haddock or cod (about 12 oz.)

PREHEAT oven to 400°F. Spread rice in 8-inch square baking dish. Pour boiling water over rice. Cover with plastic wrap. Let stand 5 min. Uncover.
ARRANGE broccoli over rice. Mix soup and water; pour over broccoli. Sprinkle with half of the cheese. Top with fish; sprinkle with remaining cheese.
BAKE 30 min. or until fish flakes easily with fork.

Substitute
Prepare as directed, using instant brown rice and KRAFT 2% Milk Shredded Reduced Fat Cheddar Cheese.

Substitute
Keep it simple. Use whatever frozen vegetables you have on hand.

Crispy Baked Pesto Chicken

4 small boneless skinless chicken breasts (1 lb.)
1 pouch SHAKE 'N BAKE Original Chicken Seasoned Coating Mix
2 Tbsp. pesto
1/4 cup KRAFT Shredded Mozzarella Cheese

PREHEAT oven to 400ºF. Coat chicken evenly with coating mix. Place in 8-inch square baking dish.
BAKE 20 min. or until chicken is cooked through (170ºF).
TOP chicken evenly with pesto; sprinkle with cheese. Bake an additional 5 min. or until cheese is melted and lightly browned.

Free babysitting

There are a total of 5 ladies that get together, we all have children from 3-6 years old. We have formed a once a week co-op for homeschooling. Here is how it works- Each week we meet on a set day were two of the moms will "teach" and the rest are "off duty" so for two hours several time a month I am kid-free! Co-op will start again in September. As for the Summer months one of the ladies and I exchange free babysitting between us, we don't keep tabs we just do as the need comes. Free babysitting, and a kid free- day off, with no babysitting budget, now that is Frugal!

WFMW -The busy box and the busy shelf

My kids are young still- Princess is 4 and Super Boy is 3, So our Mom I'm bored moments are usually when I am either on the phone, trying to have a quiet moment,cooking, or some other task that needs my attention . You know the days when you seem to have a million calls to make and the temptation is to set them in front of the TV and let them watch PBS Kids all day because you can feel LESS guilty if it is somewhat educational right? WHEEEEEWWWWWW What a sentence!
Well in a stroke of desperation/ inspiration I came up with the idea of .... Drum roll here... The Busy Box! Which has evolved into the Busy shelf :) Inside the original Busy Box you will find three or four of the following: a small chalk board and chalk (dollar store), coloring books and SPECIAL crayons ( they are no different but are special because they are in the Busy Box) , Magnets, A 88¢Wal-mart Magna doodle wannabe, homemade Goop , a couple of cheesy hand puppets, Lacing cards, 88¢ Wal-mart silly putty wannabe or homemade silly putty , stencils and small dollar store toys. I usually rotate the busy box items about once every week or so. Now, as I said, this eventually evolved into an entire BUSY shelf-, which contains the tub of play dough toys with homemade play dough, Leap Frog Fridge phonics, some homemade folder games (free ideas on line) , read along books on tape and a cheap tape player with HEADPHONES, activity bag games* and some Mom approved videos. These items can only be used with permission or at my ummm "suggestion" :) Whenever I announce "THE BUSY SHELF IS OPEN" , you would think it is Christmas at the Acosta's. It usually assures me about an hour of time and sometimes more to be able to finish my task without interruption. There are three rules: YOU must share ,YOU must clean up the one item before taking another and NO FIGHTING.
The Busy shelf works for me.

Powdered milk, mixing dry ingredients and homemade bisquick

All three of these tips go together so I am posting them all at once :)
1.One of my favorite tips is to keep one small peanut butter jar with about a cup of powdered milk (already mixed with the water) in the fridge. I use this whenever I make ANY RECIPE that needs milk. We cannot seem to get used to using it in our cereal or for drinking. . This saves bunches of money and I always have a small amount handy :) We love Pancakes and make them usually at least once a week, so I always use it in my favorite pancake recipe . I only mix about a cupful at a time because I rarely need more than that in any recipe. If it is not pre-mixed in the fridge I tend to forget to use it.
2. I LOVE my kitchenaid stand mixer! When making homemade Bisquick you have to mix the flour and shortening until it becomes similar to cornmeal. I use my mixer with the wire whisk and set it on the lowest setting . It works perfectly and my hands don't end up messy! I can let it run while I do other things in the kitchen so it saves time too! I bet you could do it with a hand mixer just as well.
3. I also use my mixer with the whisk attachment with any recipe that calls for you to mix dry ingredients separately and then add them to the wet ingredients. I would just pour the dry mix into another bowl, mix the wet stuff and then add the dry stuff back in.

My Menu for the week of June 4-10, as usual the bold items' recipes will follow the menu :) I am starting something new this week by adding snacks to my menu:) Depending on our day my kids usually have a before lunch snack and a late lunch or a early lunch and afternoon snack. In an effort to make sure that their daily food is balanced and still be frugal. I am trying to have preplanned snacks. Hopefully this will also help keep the daily brain strain away when they start with the ,"What can we eat for snack question!"
B=Breakfast, L= Lunch,D=dinner and S=Snack

The Recipes:

Dilled fish and Veggie packets

10 ounces tilapia fillets
1 cup snow peas, in pod (6 oz)
1 cup baby carrots, sliced thin lengthwise (6 oz)
1 green onion, thinly sliced
2 tablespoons white wine or chicken broth
2 tablespoons fat-free margarine
2 teaspoons fresh minced garlic
2-4 teaspoons dried dill
salt and pepper, to taste
. Prepare 2 18” squares of heavy duty foil by spraying lightly with non-stick spray. Arrange each fillet on a foil square. Sprinkle with salt and pepper.
. Combine the peas, carrots, onion, dill, and garlic, and divide between the two foil squares, spooning over fish. Drizzle each with white wine or broth.
. Fold foil into pockets, crimping to seal.
. Bake at 400 degrees for 20-25 minutes, until fish flakes easily and vegetables are crisp-tender.

Country Gravy

1 1/2 tablespoons butter
3 tablespoons all-purpose flour
1 cup beef broth
1/2 cup evaporated milk
salt and pepper to taste

Melt the butter or margarine in a medium saucepan over
medium heat. Slowly add the flour, stirring constantly, to
form a brown roux.
3 Pour in beef broth and milk, mixing well. Add ground
beef, then season with salt and pepper to taste.

Chicken Lasagna From: Tammy's Recipes

9 lasagna noodles, cooked according to package instructions

2 Tablespoons butter
1 clove garlic, minced
1/2 medium onion, chopped
2 Tablespoons flour
1 Tablespoon cornstarch
1 1/2 cups milk
1/8 teaspoon black pepper
1/2 teaspoon salt
1/4 teaspoon basil
4 ounces cream cheese
1/3 cup grated parmesan cheese
8 ounces (2 cups) mozzarella cheese, shredded
1 cup cottage cheese
2 cups cooked cubed chicken
1/8 teaspoon oregano

Instructions:

1. In a large skillet over medium heat, melt butter. Saute onions and garlic until translucent. Add flour and cornstarch, stirring to mix. Add milk, pepper, salt, and basil, whisking until well mixed. Cook and stir until thick and bubbly.

2. Add cream cheese and reduce heat to medium-low. Cook and stir until cream cheese is melted. Add parmesan cheese, stirring to mix. Remove from heat.

3. In a bowl, combine 1 cup of the mozzarella cheese, the cottage cheese, and the chicken.

4. Grease an 8x8 inch baking dish. Put a layer of lasagna noodles in the bottom of the dish. Top with half of the chicken mixture. Put a layer of lasagna noodles on top of mixture. Top with half of the white sauce. Continue layering noodles, chicken, noodles, and sauce.

5. Top with remaining 1 cup of mozzarella cheese. Sprinkle with oregano.

6. Bake uncovered at 350 degrees for 30-40 minutes, until lightly browned.

Italian sausage subs

2 lb. Italian link sausage
6 to 8 green peppers, sliced in strips
6 med. onions, sliced
1 lb. mushrooms, sliced (optional)
1 1/2 tsp. oregano
1/2 tsp. basil
1/2 tsp. garlic powder
1 c. white wine/chicken broth
1 tbsp. oil
Salt and pepper to taste

Separate links of sausage and prick with a fork. Place in Dutch oven with 1/2 inch of water. Bring to a boil. Reduce heat and simmer until all water has evaporated and sausages have given up some of their fat and are lightly browned all over. Drain fat from pan. Cut sausages into smaller pieces about 1 1/2 inches long. Add wine, garlic powder, basil, oil and oregano. Cover and simmer about 30 minutes. Top with green peppers, mushrooms and onions. Sprinkle with salt and pepper and mix well. Cover and simmer another 30 minutes or until sausage is done, stirring occasionally.

(Recipe can also be prepared in 350 degree oven).

Octopus dogs, w/ seaweed pasta

You will need:

A hot dog
Sharp knife

Cut the bottom 3/4 of a hot dog into 8ths (using vertical cuts). Leave the top 1/4 intact.
Boil as normally would.
Cook spagetti/ ramen in water tinted with green food color

chicken lo-men

1 Tbsp. cornstartch_1 tsp. ginger_1/4 c. reduced sodium soy sauce_2 boneless, skinless chicken breasts_1 pkg. chicken bouillion _1/2 c. hot water_6 oz. uncooked spaghetti_2/3 c. fresh mushrooms, sliced*_2/3 c. fresh snow peas_2 Tbsp. olive oil, divided_2 tsp. sesame oil
Instructions:
1. Combine cornstartch, ginger and soy sauce in small bowl. Cut chicken into strips; add to soy sauce. Set aside.
2. Cook spaghetti according to package directions.
3. In a large skillet, saute mushrooms and peas in 1 Tbsp. oil for about 4 minutes. (Vegetables should still be slightly crisp.) Remove to seperate bowl and set aside.
4. In the same pan fry chicken mixture until chicken is cooked. Dissolve bouillon in hot water, add to chicken mixture. Cook and stir 1 - 2 minutes or until thickened. Add mushrooms and peas.
5. Drain spaghetti, add to skillet along with sesame oil. Cook 1 - 2 more minutes, stirring often, until hot through.

May 24: Tibetan monks who had spent two days working on an intricate sand painting in a Kansas City mall will continue after an unsupervised child destroyed much of their handiwork.

KANSAS CITY, Mo. - The little boy spotted the pretty pile of colored sand on the floor of the vast hall and couldn’t resist. Slipping under a protective rope, he danced all over the sand, ruining the carefully crafted picture.

Never mind that it was the creation of eight Tibetan monks who had spent two days cross-legged on the floor of Union Station, meticulously pouring the sand into an intricate design as an expression of their Buddhist faith.

They were more than halfway done with the design — called a mandala — on Tuesday when they ended their work for the day and left. The little boy showed up sometime later with his mother, who was taking a package to a post office in the hall.
“He did a little tap dance on it, completely destroying it,” said Lama Chuck Stanford, of the Rime Buddhist Center in Kansas City.
'No problem,' monk says
A security tape shows the boy’s mother returning to the mandala, grabbing her son by the arm and walking out of camera range.
The monks saw the destruction Wednesday.

“No problem,” Geshe Lobsang Sumdup, leader of the group from the Drepung Gomang Monastery in southern India, said through a translator. “We didn’t get despondent. We have three days more. So we will have to work harder.”

The monks are on a yearlong tour of the United States and Canada to raise money for their monastery. The original monastery in Tibet was destroyed.

In a ceremony Saturday, they will sweep up the sand and offer bits to onlookers for their gardens. The rest will be placed in the Missouri River.

“The belief is that it will carry the blessings all over the planet, from the Missouri River to the Mississippi to the gulf and to all the oceans of the world,” Stanford said.
